Uncle Doug came January 10th and we had a great time with him. We went down to Hopkins and stayed there for 3 nights, to the Belize Zoo, a chocolate demonstration and the rest of the time we stayed home, harvested and played games with him. Oh yes, I almost forgot......I am getting to be a whiz in the kitchen, so I got to cook a full meal while he was here. I cooked Jalapeno Poppers, which are jalapeno peppers stuffed with cheese, then breaded and deep fried(I confess, I asked Daddy to help me with that). I also made a sweet potato and veggie stir-fry with a side of rice and slow-cooked beef. It was DELISH! Then for dessert I made a fruit pudding which was also really good.
A tasty dinner made by......Chef Paige!... |
...Followed by a wonderful dessert. |
At the zoo we saw lots of Belizean animals, such as Jaguars, King Vultures, small birds of all types, Howler and Spider monkeys, Tapir(Belize's national animal), Toucans(Belize's national bird), different types of owls, Harpy Eagles(which looked liked a stuffed owl), Pumas, Jabiru Storks, Margay(which look like baby Jaguars and are SO cute!), Pelicans, Parrots, Scarlet Macaw, Alligators, Yellow jaw, Rattler and Boa snakes, white lipped Peccaries and lots more! (If you don't know what some of these are, I encourage you to look it up because they are all quite interesting.)
Spider Monkey.....He was a shy one!! |
Tapir......Not the most beautiful animal I've seen! |
Margay.....Grady wanted one for a pet! |
Jaguar...All I can say is "WOW"
